Need Extra Minerals? Try Kelp

Kelp is a rich source of vitamins, especially the B vitamins, as well as of many valuable minerals and trace elements. It is reported to be very beneficial to brain tissue, the membranes surrounding the brain, the sensory nerves, and the spinal cord, as well as the nails and blood vessels. It has been used in the treatment of thyroid problems because of its iodine content, and is useful for other conditions as varied as hair loss, obesity and ulcers. People who have acne should, however, avoid high doses of iodine which can exacerbate flare ups and worsen breakouts.

Kelp is a type of seaweed that can be eaten raw, but it is usually dried, granulated, or ground into powder. Wakame is a kelp and looks like spinach lasagna and is probably best used in salads, added to soup or broth or used as a topping for other dishes.

Maria’s Recommendation: Purchase dried Wakame at any Japanese supermarket or through Amazon (see above). Add boiling water or follow packaging instructions and soak until it expands 10 times in size. Drain excess water and drizzle with 1 TBS sesame oil, 2 TBS Seasoned Rice vinegar, sprinkle with brown sugar and garnish with sesame seeds or Rice Seasoning ‘Yasai Fumi Furikake’. A splash of Light soy sauce is recommended to balance the flavors. Enjoy!
