Iceberg Lettuce? Does it Count?

Iceberg lettuce is the most popular of all the lettuce types. It does contain a variety of micronutrients such as Vitamin K, beta carotene and the cancer fighting carotenoids lutein and zeaxanthin. What some people might dismiss as a “filler” food is really a nutritional powerhouse. At only 10 calories per cup and packed with essential nutrients, why not consider lettuce in your next meal? If the king of lettuce in your household is iceberg lettuce, it’s time you put a little more thought into your leafy selection. Try mixing different types of greens into your iceberg-based salads. Just remember, the darker the leaf, the more nutrition it packs. Maria’s top favorite greens: Mache (lambs lettuce) arugula, micro greens and sunflower sprouts. Combine with iceberg lettuce and you will supply your body with a cornucopia of vitamins and cancer-preventing compounds. So, next time you look at that piece of lettuce on your plate remember that it does have nutritional value - so crunch away!
